August 21 marks the first total solar eclipse in 38 years, and what better way to celebrate this rare event than with a cocktail-inspired by the special occasion. While one of nature’s most wondrous spectacles will be over in less than 3 minutes, you can enjoy these solar eclipse inspired cocktails created with Mount Gay Eclipse (Rum was inspired and named during 1910’s total eclipse over the South Pole) all year long. Moon Shadow
2 oz Mount Gay Eclipse
½ oz Fresh Squeezed Lime
½ oz B12 mixed with Simple Syrup
Top with Ginger Beer
Method: Add all ingredients to a Collinsglass (or a vessel of your choice!) with ice and stir. Top with ginger beer. Watch it glow. Drink it slow.
Solar Eclipse
2 oz Mount Gay Eclipse
4 oz Ginger Beer
1 tsp Activated Charcoal
1 Grapefruit (carved out)
Method: Mix Mount Gay Eclipse and activated charcoal in a glass with ice. Strain into carved out grapefruit and top with ginger beer.
Total Eclipse of the Heart
1 oz Mount Gay Eclipse
1 oz Dark Herbal Liqueur
1 oz Pineapple Juice
¾ oz Lime Juice
¾ oz Cane Syrup
Splash of Sparkling Red Wine
Method: Shake all ingredients (except sparkling red wine), strain over large cube in a double rocks glass and top with sparkling red wine.
Goodbye Sunshine
2 oz Mount Gay Eclipse
4 oz Ginger Beer
Method: Add ice to a rock glass. Garnish with orange-wheel.
